Meet Karl, my new Keurig! #BrewItUp

Sometimes (often) the universe gives you exactly what you ask for and this case: I asked for a Keurig! It’s been one long year of envying my friends and family theirs and the kind folks at KHQ (Keurig Headquarters) decided to end that nonsense and gave me my own. Can’t wait to break it in. I might go to bed early just to get started!

Turkey (sausage) & kale soup

I got this idea from a friend, Mindy T., who showed off the pretty kale she grew and made into turkey sausage stew. I don’t have any leftover turkey so I’m using spicy turkey sausage but if you do, use it!

I’m using my crockpot but the recipe I’m using is from

Will let you know how it turns out but I can’t imagine  that it will be bad, especially in frigid temps!

Low carb curry chicken and “rice”

West Indian comfort dish curry chicken and rice made healthier and starch free!
1 LB chicken diced, seasoned with curry powder dash of salt.
1.5 cups lightly steamed cauliflower, processed in food processor to rice-like consistency.
2 tsp coconut oil

Heat a tsp of coconut oil add Sauté 1/2 diced onion then add chicken and brown.
Add 1.5 cauliflower and another tsp coconut oil. Combine mixture until well blended. Serve!

Starch-free Cauliflower rice anyone?

I’m sure you’ve heard a lot about paleo rice so I won’t bore you but Isn’t it pretty? So fluffy and glowing in its little bowl. Other than that there isn’t much to say about cauliflower other than it has 12grams of dietary fiber, 29 total grams of carbohydrates and 11 grams of protein per head. Scooore!!

1.5 cups of cauliflower florets, processed for 90 seconds.
Then microwaved for 1 minute.
Enjoy under something flavorful and lessen the guilt-load.

Mayo-free Potato Salad

Like many of you, I’m spending this 4th of July with my family. Not sure we’ll get to see fire-works but we’ll sure be having some in our mouths today since us Jamaicans like things spicy. My contribution to the food pile is a grill-out staple of potato salad sans mayo. I’m really not a fan of the white stuff UNLESS its in egg salad (which I shouldn’t eat). This recipe relies on a liberal use of fragrant rosemary and thyme with just enough mustard to glue it together. I first diced the potatoes then boiled them and finally roasted them in the oven with the herbs on. After letting them cool for 5 minutes, I added some more spices with as much mustard as it takes to make them cohesive. No salt or fat added = guilt free!
