Rainy Sunday chicken soup


20130519-122727.jpgIt’s nice and wet here in Brooklyn which means warm weather is on its way and plant life will flourish. It also means I’m hungry for some comfort food and don’t want to leave my house to find it. Luckily, I have the remains of a whole rotisserie chicken to form the base for one of my favorite recipes:
Left over cooked chicken with bones
1 large sweet potato, chopped
3 celery stalks, chopped
3 carrots, chopped
1 large onion, chopped
8-12 cups water
Season as preferred

Sauté the onion for a couple mins with a touch of oil, add water and all vegetables. Bring to a boil and then let simmer for 20 mins. Add chicken and let simmer for another 10-13 mins. Serve and enjoy!
